Stollen is a bread dough, slightly enriched by milk and sugar, studded with dried fruits and wrapped around marzipan or poppy seeds.
So I thought: what goes with marzipan? Marzipan is almonds and almonds go with cherries. So marzipan and cherries. And what goes with cherries? Chocolate. Chocolate goes with most things, doesn’t it?
As always, getting an enriched dough to rise as fast as you expect is a problem, especially when the dough is slowed down with 45g of grated pure (100% cocoa, unsweetened) chocolate – but rise it does. I went for the Swiss Roll wrapped approach, rather than the Pain au Chocolate filling, and I think it works pretty well.
Of course, the real test will come with the judgement of my taster, Bailey, an expert on all things cake, cherry and – especially – chocolate!
